'Maiorca' is an ancient Sicilian wheat variety, produced by organic farming; it is an extremely digestible type of wheat, also recommended for people with gluten sensitivity, due to its low gluten content.
It has a high fibre content and is a high quality product with excellent bread-making characteristics, especially for desserts like the famous 'pastiera napoletana'.
